Today, vanilla beans are grown in four main areas of the world. Each region produces vanilla beans with distinctive characteristics and attributes. Madagascar, an island off the east coast of Africa, is the largest producer of vanilla beans in the world and the ensuing vanilla is known as Madagascar Bourbon vanilla. The term Bourbon applies to beans grown on the Bourbon Islands - Madagascar, Comoro, Seychelle and Reunion. There is no connection with the liquor produced in Kentucky in the United States. Agave Syrup

The Maguey is one of the most important plants in Mexican culture. The term refers collectively to the some 200 species of agave that grows in many regions of the country.

The Agave plant is actually related to the lily and amaryllis. It is known as a succulent and, although it shares a common habitat with many cacti, it is not one itself. A mature agave has leaves 5–8 feet tall, is 7–12 feet in diameter and has a life span of 8–15 years..

The plant has been viewed mystically, being a rare producer of liquid in the desert.

To collect its sweet secretion, the core of the matured plant is opened and its clear sap, known as aguamiel, can be harvested over a six-month season.

Some of this "juice" is consumed regularly for its nutritional value—it contains vitamin B and C, as well as proteins and calories—while the rest is left to ferment and produce a mildly alcoholic beverage, pulque.

The Agave plant is also used to make tequila, rope, clothing and paper.

Few understand the difference between tequila and mezcal. They both derive from varieties of the Agave plant, known to the natives as mexcalmetl. Tequila is made from only agave tequilana Weber, blue variety. Mezcal, on the other hand, can be made from five different varieties of agave.

Caramel in its most basic form is a a soft or hard candy, but it is also used as a flavoring in coffees, soda and desserts . Some other popular uses for caramel include: Caramel apples, nougat, praline candy, peanut brittle and caramel corn.

Milton Hershey began his chocolate empire not with chocolate, but with caramel. Hershey was born in 1857 in Pennsylvania, and rather than become a printer, he founded a candy-making business in Lancaster, Pennsylvania. By 1886, he had founded the Lancaster Caramel Company, surely utilizing traditional recipes that were found in many regional cook-books. He learned about chocolate-making because he sought new coatings for his famous caramels.

Caramel Corn was first invented by Frederick William Rueckheim and his brother Louis Rueckheim who decided to try covering the Popcorn that they made with molasses. The new invention, termed "Candied Popcorn and Peanuts" debuted at the first World's Fair in Chicago and eventually became known as "Cracker Jacks."

A gentleman by the name of Dan Walker is credited for developing the Caramel Apple in the 1950s. Mr. Walker was a sales representative for Kraft Foods, makers of those popular individually wrapped caramel candies.
